Rain Rain Go Away

We recently had two gorgeous weather days and now it's wet and freezing! Us Texans can't handle the cold ;) I started the day with some lemon mint water and this outfit of the day. I do plan on throwing off the hat, vest and scarf to go workout at the box in my swiftly tech long sleeve. Have I bragged at all yet how comfy these shoes are?! These are my first pair of Inov-8's and I love them! I highly recommend these for working out and they also have shoes for running. I have no complaints and with my skin condition they haven't hurt one bit!

I must mention I stopped at Dunkin' Donuts and tried their smore's hot chocolate. Oh my! That was so good and a perfect little treat on this gloomy day =)

Now although I love wearing hats and scarves nothing beats sunny 65 degree weather with a breeze ;)

Homemade Popcorn

I've been wanting to try to make homemade popcorn for awhile now and just haven't gotten around to it. We typically buy organic packaged popcorn from Whole Foods or H-E-B but homemade is homemade and with the right ingredients can be much better and healthier for you.

The ingredients I used are:

Ancient Heirloom popcorn kernels.

Coconut oil

Unrefined sea salt

Hemp seeds

and

That's it!

I put 1/4 cup kernels in a pot with 1 1/2 TSP of coconut oil. I put a lid on and the heat on high. In my Nutribullet I combined the sea salt and hempseeds to grind them up. ( I guessed how much I wanted and didn't measure)  Once the popcorn was done I poured 1 TBS of coconut oil and then the sea salt and hemp seeds. They popped a bit smaller than what I'm used too but It was SO good and I loved that it literally had only 4 ingredients.  It was super quick to make too. Now, I'm not saying I won't ever buy the organic kind I was buying but I definitely will be making this a lot more often! =)

Guiltless Cookie dough truffles

So I was having a MAJOR sweet tooth today, which is pretty common for myself. I just love sweets. I like to browse Pinterest for new ideas on things to make. I find different recipes that I like however I don't always follow it to a "T". I like add or take away what I feel at that time. I found a few different ways to make these cookie dough truffles. I've also made protein balls with oats in the past but wanted something a little different.

For these I used 1 cup of organic peanut butter. ( you can use almond butter as well) from experience almond butter tends to set better. I decided on peanut butter tonight though =)

Add:

1/4 cup coconut flour

1/4 cup melted coconut oil

1tsp vanilla extract

1/2 cup organic fair trade chocolate morsels

1/2 tsp refined sea salt

 

I mixed altogether in a bowl and stuck in the fridge for 30 minuets. I then used a spoon to help make them into little balls. In a separate bowl I had organic melted chocolate and carefully put each ball in the chocolate. I placed each one on a plate with wax paper and stuck in the freezer for another 30 min. Viola! There are so many ways to make these! You can add protein powder, oats, raisins Etc. Enjoy it with a glass of almond milk and you have yourself a nice little guiltless snack or dessert. It definitely helped my sweet tooth tonight ;) Now mine clearly don't look "Pinterest pretty" but they taste delicious and that's what counts right?! =)
